Green Beans: Garlic Ginger

INGREDIENTS

1 to 2 tbsp vegetable oil
1 pound green beans, washed and trimmed
1 tbsp minced fresh ginger
4 large garlic cloves, minced

PREPARATION

1. Bring a large pot of salted water to a boil, then cook beans until just tender.

2. When ready to serve, heat oil in a wide skillet over high heat. Add beans, ginger and garlic. Cook, stirring and tossing constantly, until beans are heated and aromatic. Sprinkle with salt, if desired.

NOTE French-style slim haricots verts work especially well.
